Apricot, Cranberry & Chestnut Stuffing
This deliciously different chestnut, apricot and cranberry stuffing compliments the turkey wonderfully and is roasted separately from the festive bird so that it crisps up and adds an extra flavour to your Christmas dinner.
Preparation time 10 minutes
Cooking time 35 minutes
1 Preheat the oven to 200C / 400F.
2 Melt the butter in the saucepan and add in the oil.
3 Fry the onion and celery for about 10 minutes until soft.
4 Mix in the chestnuts and fry for about 2 minutes until they are golden.
5 Switch off the heat, mix in the rest of the ingredients and season with salt and pepper.
6 Transfer the stuffing to a lightly oiled roaster and bake for about 20 minutes until crunchy and golden.
