Preparation time 5 minutes

Cooking time 2 hours

1 Put the ham in a large pot, cover it with water, bring to the boil and then discard the water.

2 Cover the ham with some fresh water and this time, add in the celery, onions, carrots and bay leaves.

3 Bring to the boil, cover and simmer for 20 minutes per 500g (in this case 1 hour and 40 minutes).

4 Remove the ham from the water, transfer to the roasting tray and let it cool.

5 Preheat the oven 200C / gas 6 and make the glaze by mixing the orange juice and honey together until well combined.

6 Pull the skin off the ham (careful not to take any fat off), score the fat and transfer the ham into a lined oven tray. Brush half of the glaze all over the ham.

7 Bake for 10 minutes, and then add the rest of the glaze and bake for a further 10 minutes.
