Spiced Pilaf Rice

Use your Prestige microwave pressure cooker for this quick fluffy spiced pilaf rice. Make with a few pantry staples and serve with your favourite curry.

Method

1 Wash the rice, then soak in cold water for 30 minutes before draining thoroughly and setting aside.

2 Heat 1 tbsp oil in frying pan, add the onion and cinnamon and fry until soft about 7 minutes.

3 Then stir in the cardamom, cumin seeds and cloves and fry for 1 minute until fragrant.

4 Add another tbsp of oil and the rice and fry for 2 minute, stirring constantly until the rice is well coated.

5 Transfer the rice mixture into the bowl of the microwave pressure cooker, discard the cinnamon stick and mix in the vegetable stock.

6 Place on the lid and lock into the closed position.

7 Cook on high for 15 minutes.

8 Allow the pressure to reduce until the white indicator has dropped down then carefully open the lid.

9 Stir the pilaf and serve it warm.
