These crispy chicken fillets make a great snack when dipped into some garlic or chilli mayonnaise. They are also perfect for or a quick and easy week-night meal when served along with some salad.

Ingredients

100g panko bread crumbs or normal breadcrumbs

1/2 tsp garlic powder

1/2 tsp paprika

Salt

Freshly ground black pepper

1 large egg

1 tsp grainy mustard

¼ teaspoon ground black pepper

2 X 250g chicken breasts cut into half

Olive oil for frying

Instructions

1Mix together the breadcrumbs, garlic powder, paprika, salt and black pepper in one bowl and set aside

2Crack the eggs into a second bowl, beat and mix in the grainy mustard

3Dip both sides of a chicken piece in the egg, shaking off the excess egg. Then dip it into the bread crumb mix, until the chicken piece is fully coated. Set the chicken aside and continue until all the rest of the chicken pieces are coated

4Heat the oil in the frying pan over medium heat, then fry the chicken pieces for about 2-3 minutes on each side or until the chicken is cooked through and the breadcrumbs are golden

5Serve with some dipping sauce.
