Fillet Steak with Wild Mushrooms

Celebrate valentine's day with an extravagant home cooked fillet steak. Serve with mash and vegetables of your choice; perhaps even toasting the occasion with glasses of pink champagne.

Ingredients

2 x 200g fillet steaks

1 teaspoon cracked back peppercorns

2 garlic cloves crushed

2 tablespoons extra virgin olive oil

200g assorted wild and cultivated mushrooms

trimmed

halved

100ml robust red wine

Sea salt flakes

Chopped herbs of choice

Instructions

1Rub the cut surfaces of the beef with pepper and garlic and then put 1 teaspoon of the oil into a non-stick frypan and heat strongly

2Saute the beef on a high heat for 2 minutes each side and then remove but keep warm

3Now add the remaining oil and the mushrooms and saute over medium heat for 2 minutes

4Add the wine and push the mushrooms to the side of the pan. Stir what is left in the pan to create a deglazed, reduced sauce, adding salt to taste. Serve the sauce and mushrooms with the beef, mounted on a bed of mash. Garnish with chopped herbs, if liked.
