Microwave Moroccan Vegetable Casserole

Ingredients

1 leek

finely sliced

1 carrot

peeled and cubed

1 stick celery

sliced

500ml vegetable stock

1 X 400g tin chickpeas

drained and rinsed

1 X 400g tin chopped tomatoes

2 tbsp balsamic vinegar

1 tsp ground cinnamon

1/2 tsp ground cumin

1/2 tsp ground ginger

1/2 tsp ground paprika

Ground black pepper

Salt

Instructions

1Place all the ingredients into the bowl of the microwave pressure cooker and mix thoroughly

2Place on the lid and lock into the closed position

3Cook on high for 30-35 minutes

4Allow the pressure to reduce until the white indicator has dropped down. Then carefully open the lid

5Stir the casserole before serving.
