We can’t control the weather this summer, but we can suggest five delicious recipes to make - whether it’s rain or shine! If you’re anything like us, you’re hoping that your July is full of sunshine, picnics and al fresco dining. However fate, folklore and a saint born in the 800s may have other ideas. July 15th is St. Swithin’s Day and, according to tradition, if it rains then it will rain for the next 40 days.

Unfortunately, we can’t control the weather. And while there’s absolutely no statistical evidence to support this old wives tale, we’re not taking any chances when it comes to our summer cooking. With this in mind, we’ve found five great summer recipes from some of our favourite food bloggers which are guaranteed to taste great - no matter what the weather has in store.

GET THE GRILL OUT


Food Stories’s Super Green BBQ Chicken Salad is full of our favourite things - tenderstem broccoli, grilled chicken and a dressing packed with garlic. It’s healthy without being overly virtuous and light enough to make a delightful (if pungent) lunch. She recommends bashing the chicken thighs first before popping them on your grill pan, to ensure that they get a nice even sear. Eat this while sitting in your back garden pretending you’re in the South of France.

Speaking of dishes which remind you of summer holidays, Pinch of Nom’s Moroccan Lamb Burgers are full of spice and all things nice. They’re seasoned with a baharat spice blend which includes smoked paprika, nutmeg and black pepper. You can cook these in a frying pan, but we also think they’d go nicely on any barbecue. We’d add some feta cheese to these, but they’d be equally as nice accompanied by a nice harissa mayonnaise.,

PICNIC TREATS WHICH ARE GOOD ENOUGH TO EAT INDOORS


Everyone loves sausage rolls, whatever the weather. They make the perfect picnic treat or, if it’s too rainy to even contemplate sitting outside, you can just munch on a big batch of them in front of the TV. The Last Food Blog’s vegetarian sausage rolls are filled with mushrooms, lentils, chestnuts, herbs and garlic and just the thought of them has just drooling. Hearty, savoury and incredibly moreish, these are certain to please everyone - including meat eaters!

Sometimes, you just can’t beat a good scone (particularly when they’re smothered in jam and cream.) Tinned Tomatoes’s Blueberry Lemonade Scones use just three ingredients to get them light and fluffy - self raising flour, yoghurt and fizzy lemonade! The process is super quick and super simple - our favourite kind of baking - , meaning that you can be pulling a baking tray of freshly baked scones out of the oven in under an hour.

WHEN IT’S TOO HOT TO TURN THE OVEN ON...


There are some days where just the thought of turning the oven on is enough to break you into a sweat. When they happen, we say embrace the no baked treats, like these Vegan No Bake Caramel Bars from Nadia’s Healthy Kitchen. Featuring caramel, chocolate and a (dairy free) buttery biscuit base, they’re like a grown up version of a Twix. We love her method of adding tahini for a slightly salty, sesame kick.
