Summer’s in full swing so why not add a pop of colour into proceedings with these healthy homemade ice lollies which are perfect for kids. There’s no need for artificial flavours and colours when natures ingredients are some of the brightest colours around. Kids will love helping to make these fun, quick and super practical popsicles, plus unlike those from the supermarket, you know exactly what’s going into them!

This quirky way of sneaking fruit into your kid’s diet is healthy, inexpensive and great for occupying your little ones on those sunny, chilled days at home.

From lollipops to popsicles and creamsicles there are many different ways to experiment with an assortment of fruit. There’s no need to worry about high levels of sugar, pretty much any flavoursome ingredient works. You can even add a little lemon juice or chilli to give your lollies an extra kick!

To begin creating delicious freezer treats, all you need is plastic moulds, wooden sticks or go for the super economical option and re-use yogurt pots.

COCONUT MILK CREAMSICLES

Vegan creamsicles are made with coconut milk and fresh orange juice. Without refined sugar, these creamsicles are a great paleo and vegan summer treat.

INGREDIENTS

• 1 cup full fat coconut milk • 2 tablespoons pure maple syrup (or liquid sweetener of choice) • 1 teaspoon pure vanilla extract • 1 cup orange juice (preferably fresh squeezed, or at least 100% juice, not from concentrate) • 1 tablespoon orange or lemon zest (or mixture of the two)

INSTRUCTIONS

1. In a small bowl, mix together coconut milk, maple syrup and vanilla extract and set aside.

2. In a separate bowl, mix together orange juice and orange/lemon zest and set aside.

3. Assemble: To layer, divide ¼th of the coconut mixture into the popsicle moulds and freeze until hard, about 30 minutes. Add orange juice layer and freeze again. Repeat until all of the coconut milk and orange juice is used up.

Alternatively, simply mix the orange juice and coconut milk together, pour into the moulds and then freeze until solid, several hours. ,

FRUIT POPSICLES WITH COCONUT WATER

They look like small pieces of art, are incredibly fun to eat (your children will love them) and taste so good!!

INGREDIENTS

• Coconut water • Blueberries • Strawberries • Kiwi • Orange

INSTRUCTIONS

The list of ingredients is more of a suggestion than an actual list of ingredients.

The basic rule of this recipe is that there is no rule. You can combine any fruit or berry you would like, just make sure you peel the ones that need peeling.

Other than that, it’s up to you. Put them in the popsicle moulds and pour over coconut water. Freeze. Enjoy. ,

SPRING BOUQUET POPSICLE

INGREDIENTS

• 16 ounces cold water • 1 ounce orange blossom water • 1 teaspoon lemon juice • plain stevia drops (or your favourite sweetener or honey) • handful of organic edible flowers, rinsed and remove petals

INSTRUCTIONS

1. Have pop moulds handy and make sure you have room in your freezer.

2. Combine water, orange blossom water and lemon juice. Sweeten to taste.

3. Pour mixture into moulds.

4. Freeze without sticks and petals for about 1 hour.

5. Remove from freezer and add flower petals. You can push them into the moulds with the help of a long, skinny spoon or pop stick. Make sure the flowers are scattered throughout the pops.

6. Add sticks and freeze for 2-3 hours more until solid. ,

FRUITY ICE LOLLY PENS

Dip these fruity ice lollies in natural food colouring then encourage kids to start scribbling

INGREDIENTS

• 50ml sugar-free blackcurrant cordial • 50ml sugar-free orange cordial • 5 tsp each red and orange natural food colouring, plus extra for painting • 50g blueberry • 50g strawberry, chopped • A few red grapes, halved

INSTRUCTIONS

1. Pour each cordial into a separate jug, and add the corresponding food colouring. Stir in 100ml water. Put the blueberries, strawberries and grapes into the ice-lolly moulds and pour the blackcurrant mixture up to the brim of 3 moulds. Pour the orange cordial into the remaining 3 moulds. Freeze for 4 hrs.

2. Remove the lollies from the moulds and dot extra food colouring onto a dish. Dip the lollies into the colouring and use to draw on clean paper – while enjoying the lolly at the same time. ,

GUAVA & PASSION FRUIT LOLLIES

INGREDIENTS

• 300 ml passion fruit juice (Rubicon) • 300ml guava juice (Rubicon)

INSTRUCTIONS

1. Pour 300ml passion fruit juice into 8 lolly moulds and half-fill.

2. Freeze until almost solid, push in a lolly stick and top up with 300ml guava juice. Freeze until solid.
