Griddled Mango with Dark Rum and Passionfruit Sauce

Staying in with your Valentine this February 14th? No Valentines meal is complete without dessert. Throw off the clichéd chocolates and ditch the shop-bought sweets; round off your evening with a touch of passion with this exotic combination of flavours. Ensure the mangoes are soft and ripe to touch for a perfect Valentine’s Day dessert.

1 Cut two ‘cheeks’ from each mango by slicing lengthways on either side of the stone.

2 Heat a grill pan until hot.

3 Place the mango cheeks, cut side down, and cook for 2-3 minutes until lightly charred and browned. Remove and set aside.

4 Place the sugar, rum and Passion Fruit pulp seeds in a 20cm saucepan and bring to a boil.

5 Remove the heat and spoon this mixture over the griddled mango.

6 Serve immediately with a scoop of ice cream if desired.
