1 Rub the steaks generously with 1 tbsp olive oil and season with salt and black pepper.

2 Heat the remaining oil in the frying pan and cook the steaks for 5 minutes for rare, and about 8 minutes for medium rare or cook for longer to your likening.

3 Let the meat rest for about 5 minutes before serving it with the juices and any sauces over the meat.
