Ingredients
2 tablespoons sesame oil divided2 cloves garlic minced1 1-inch piece fresh ginger grated450g brown rice cooked cooled and separated50g frozen sweetcorn50g frozen peas50g mixed peppers choppedMedium carrot peeled and choppedMedium apple peeled and chopped½ onion peeled and sliced½ tablespoon rice vinegar8-10 tablespoons soy sauceFresh Basil
Instructions
- Heat one tablespoon oil in a large pan over medium heat. Add the garlic cloves, ginger and onions and stir fry for one minute
- Add the rice and stir fry for a few minutes
- Add the frozen sweetcorn, peas, carrots, apple, mixed pepper, rice vinegar, and soy sauce and stir fry for another 1-2 minutes. Remove from heat, stir in the fresh basil.
