Ingredients
2 tablespoons sesame oil
divided
2 cloves garlic
minced
1 1-inch piece fresh ginger
grated
450g brown rice
cooked
cooled
and separated
50g frozen sweetcorn
50g frozen peas
50g mixed peppers
chopped
Medium carrot
peeled and chopped
Medium apple
peeled and chopped
½ onion
peeled and sliced
½ tablespoon rice vinegar
8-10 tablespoons soy sauce
Fresh Basil
Instructions
1Heat one tablespoon oil in a large pan over medium heat. Add the garlic cloves, ginger and onions and stir fry for one minute
2Add the rice and stir fry for a few minutes
3Add the frozen sweetcorn, peas, carrots, apple, mixed pepper, rice vinegar, and soy sauce and stir fry for another 1-2 minutes. Remove from heat, stir in the fresh basil.
