American Style Blueberry Pancakes

Enjoy pancakes all year round. These trendy American style blueberry pancakes can be ready at your breakfast table in a matter of minutes. Serve as a savoury treat or add a sweet kick with a blueberry coulis.

200g self-raising flour

1 tsp baking powder

1 egg

300ml milk

Knob of butter

150g pack blueberries

Sunflower oil or a little butter for cooking

2 tbsp icing sugar

50ml water

Pinch of salt


1Beat together milk, flour, baking powder, egg and the pinch of salt until it forms a thick batter which has the consistency of double cream

2Melt a knob of butter, and pour into the batter

3Heat oil in a 24cm frying pan and spoon the batter mixture into the middle of the frying pan

4Let it cook for 2 minutes and add a few blueberries to the pancake. Cook until golden brown and then flip

5Cook on the other side for another 3 minutes or until golden brown

6While the pancakes are being cooked; add half the blueberries into a saucepan, with the water and icing sugar

7Simmer until you have a dark purple sauce and the blueberries have broken down slightly

8Pour over the pancakes and sprinkle with a little more icing sugar.
