Baked Apple Pancake Recipe

Serves: 4–6

Ingredients

For the pancake

  • 3 large eggs
  • 150ml whole milk
  • 100g plain flour
  • 1 tsp vanilla extract
  • Pinch of salt

For the topping

  • 2 eating apples, sliced
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • Pinch of nutmeg

To serve

  • Greek yoghurt
  • Maple syrup
  • Chopped pecans
  • Icing sugar

Method

  1. Preheat the oven to 220°C.
  2. Whisk together the eggs, milk, flour, vanilla and salt until smooth.
  3. In an oven-safe baking tray or frying pan, gently cook the apples in butter until slightly softened.
  4. Stir through the maple syrup, cinnamon and nutmeg.
  5. Pour the batter over the apples.
  6. Bake for 18-22 minutes until puffed and golden.
  7. Serve immediately with yoghurt, pecans and a drizzle of maple syrup.
