Ingredients
200g self-raising flour 100g wholemeal self-raising flour 30g porridge oats, plus 1tbs extra for sprinkling 1½ tsp baking powder 1 tsp bicarbonate of soda 100g caster sugar 3 medium free-range eggs 200g full fat natural yogurt 100ml light olive oil or melted coconut oil 1 tsp vanilla extract Zest of 1 lemon 200g fresh raspberries or blueberries (or a mix of both)
Instructions
- Preheat the oven to 160ºC fan/180ºC conventional/gas 4. Line the Disney inspired muffin tin with paper cases.
- Add the flours, oats, baking powder, bicarbonate of soda and sugar to large Disney themed mixing bowl.
- Crack the eggs into another bowl or jug and add the yogurt, oil, vanilla and lemon zest. Beat with a fork to combine.
- Pour the egg mixture into the dry ingredients in the large bowl and stir briefly to combine (don’t worry if there are a few lumps). Fold in the raspberries but do not overmix. Leave to stand for 2-3 mins.
- Spoon the mixture into the paper cases until they are almost full then sprinkle on a few more oats.
- Bake in the oven for 15-20 minutes or until risen and golden
Made with a blend of wholemeal and self-raising flours, they boast a higher fibre content than your typical breakfast muffin. The addition of juicy raspberries and blueberries not only lends vibrant colour but also provides a boost of antioxidant-rich polyphenols.
