- Heat the oil and butter in the sauces pan over medium heat, add the mushrooms and garlic and fry for up to 8 minutes until the mushrooms are slightly browned
- Quickly stir in the spring onions and fry for 1 minute
- Add the wine and cook for another minute
- Stir in the mustard and cream, reduce heat and simmer for couple of minutes or until the sauce thickens
- Adjust seasoning and serve over your steaks or with some bread.
