- Wash the rice, then soak in cold water for 30 minutes before draining thoroughly and setting aside
- Heat 1 tbsp oil in frying pan, add the onion and cinnamon and fry until soft about 7 minutes
- Then stir in the cardamom, cumin seeds and cloves and fry for 1 minute until fragrant
- Add another tbsp of oil and the rice and fry for 2 minute, stirring constantly until the rice is well coated
- Transfer the rice mixture into the bowl of the microwave pressure cooker, discard the cinnamon stick and mix in the vegetable stock
- Place on the lid and lock into the closed position
- Cook on high for 15 minutes
- Allow the pressure to reduce until the white indicator has dropped down then carefully open the lid
- Stir the pilaf and serve it warm.
