Spiced Pilaf Rice

Use your Prestige microwave pressure cooker for this quick fluffy spiced pilaf rice. Make with a few pantry staples and serve with your favourite curry.

300g basmati rice

2 tbsp olive oil

1 small onion

finely chopped

1 stick cinnamon

1 tsp cumin seeds

6 cardamom split

6 cloves

500 ml hot vegetable stock



1Wash the rice, then soak in cold water for 30 minutes before draining thoroughly and setting aside

2Heat 1 tbsp oil in frying pan, add the onion and cinnamon and fry until soft about 7 minutes

3Then stir in the cardamom, cumin seeds and cloves and fry for 1 minute until fragrant

4Add another tbsp of oil and the rice and fry for 2 minute, stirring constantly until the rice is well coated

5Transfer the rice mixture into the bowl of the microwave pressure cooker, discard the cinnamon stick and mix in the vegetable stock

6Place on the lid and lock into the closed position

7Cook on high for 15 minutes

8Allow the pressure to reduce until the white indicator has dropped down then carefully open the lid

9Stir the pilaf and serve it warm.
