For the rainbow noodle salad: 400g rice noodles 1 red pepper deseeded and finely sliced 1 yellow pepper deseeded and finely sliced 1/4 small red cabbage finely shredded 1 large carrot peeled and cut into matchsticks 4 spring onions sliced 2 tbsp toasted sesame seeds For the lime salad dressing: 2 tablespoons olive oil 1 tablespoon lime juice 2 tablespoons white wine vinegar 1/2 - 1 teaspoon honey Large pinch of lime zest Salt
Instructions
- Cook the noodles in some salted water according to the packet instructions
- Drain noodles when done, let cool and transfer to a salad bowl
- Assemble the salad starting with the noodles and topping with the vegetables and toasted sesame seeds
- Make the salad dressing by whisking all the ingredients together and pouring over the salad.
