Ingredients
For the rainbow noodle salad:
400g rice noodles
1 red pepper deseeded and finely sliced
1 yellow pepper deseeded and finely sliced
1/4 small red cabbage finely shredded
1 large carrot peeled and cut into matchsticks
4 spring onions sliced
2 tbsp toasted sesame seeds
For the lime salad dressing:
2 tablespoons olive oil
1 tablespoon lime juice
2 tablespoons white wine vinegar
1/2 - 1 teaspoon honey
Large pinch of lime zest
Salt
Instructions
1Cook the noodles in some salted water according to the packet instructions
2Drain noodles when done, let cool and transfer to a salad bowl
3Assemble the salad starting with the noodles and topping with the vegetables and toasted sesame seeds
4Make the salad dressing by whisking all the ingredients together and pouring over the salad.
