Flamenco Eggs

Savour the flavours of Spain with this simple to cook dish of Parma ham, tomatoes and eggs. Swap out the ham for mushrooms or halloumi for a vegitarian option - absolutely delicious!

Preparation time 5 minutes

Cooking time 10 - 15 minutes



1 Sauté the onions until softened and add the tomatoes and simmer for 5 minutes.

2 Crack the eggs on the tomatoes and continue to cook.

3 Add the Parma ham, spring onions and continue to simmer until eggs are cooked add salt and pepper to taste turn off the heat and sprinkle with parsley.

4 Serve and enjoy.
