Ingredients
6-8 spears asparagus 1 tsp butter 4 free range eggs Salt and pepper 1 fillet hot-smoked salmon (or poached salmon) Few fresh chives, chopped
Instructions
- Blanch the asparagus in a pan of boiling water for just 2 minutes then drain.
- Crack the eggs into a jug or bowl and whisk with a fork, season well with black pepper and a tiny bit of salt (not much as the fish is salty). Add the chopped chives.
- Add the butter to your Disney inspired small frying pan over medium heat. When the butter has melted add the asparagus and fry for a minute then lift out onto a plate.
- Put the pan back over medium high heat and pour in the egg mixture. Leave for a few seconds then gradually pull in the edges as they cook, using your Disney themed spatula. When the egg is almost cooked but still soft, add the asparagus and flake in the salmon, keeping everything to one side.
- Use your spatula to carefully fold the omelette in half then slide onto a plate.
The combination of creamy eggs, fresh asparagus, and rich salmon creates a wonderfully balanced and satisfying dish.
