- Rinse the basil and spinach then dry on kitchen paper or in a clean teatowel.
- Toast the nuts in dry Disney themed frying pan for a few minutes, shaking frequently until lightly golden then allow to cool – watch them carefully and keep the heat medium to low as they can burn easily.
- Add the basil, spinach, cooled nuts (reserve a few for garnish if you like) and garlic to a small food processor and blitz until well chopped. Add the parmesan and half the oil and blitz again. Tip into a bowl and stir in the rest of the oil and a squeeze of lemon juice. Taste and add a little salt or more cheese or lemon juice if needed.
- Using Disney inspired saucepan cook the pasta in boiling water until al dente then drain.
- When the pasta is almost ready, sauté the cherry tomatoes in a teaspoon of oil for a couple of minutes then tip the pasta into the pan with a spoonful of pasta cooking water.
- Add the pesto and stir then serve immediately with extra basil, chopped nuts and parmesan cheese on top. Great with homemade focaccia (see recipe) and a salad.
Tip: If you don’t have a food processor you can make the pesto in a pestle and mortar – grind the basil, spinach and garlic together with a pinch of salt then add the nuts and grind again. Tip into a bowl and gradually add the oil, before finishing with a little lemon juice
