Ingredients
1 tbsp Olive OilKing Prawns½ cm Fresh ginger finely sliced & diced½ clove Garlic peeled finely sliced & diced1 Red Chilli finely sliced1 tsp Garam masala½ tsp Ground turmeric½ tin Coconut milk reduced fat1 tbsp Soy sauce½ tbsp Mango chutney½ tbsp Tomato puree1 bunch Coriander fresh finely chopped½ Fresh Lime – Squeeze1 tbsp of cornflour
Instructions
- In a frying pan sauté the onion for a few minutes until a little coloured. Do this on a high heat so it colours fast yet still retains some texture
- Now add the Chilli, Garlic and Ginger, keep stirring this to prevent anything from catching. After 30 seconds, add the Turmeric and Garam Masala,Now add the Coconut milk, and the king prawns. Stir this and allow to come up to a simmer, try not to let this boil,Once simmered, add the Mango chutney, tomato puree & soy sauce. Allow this to simmer for 3-4 minutes then add the cornflour to thicken the sauce
- Just before serving, Chop the coriander last minute and add this in to the pan, squeeze in the juice of a Lime, stir and serve with Brown rice
