100g new potatoes
50g smoked bacon
1 fresh pepper
red or yellow
50g cheddar cheese
1 medium white onion
4 medium free range eggs
1Chop the new potatoes into small pieces and fully cook by boiling for 10 minutes, once done put in a bowl and allow to cool
2Preheat the grill to full heat
3Add the bacon and onions in a frying pan and cook for 3 minutes then add the sliced pepper and cook for a further 2 minutes
4Add the cooked potato to the pan and stir briefly
5Crack 4 eggs into a bowl and mix together well. Then pour over the mixture and allow to cook for 2 minutes
6Once the base it solid, sprinkle over the grated cheese and a little black pepper and slide under grill until puffy on top, this should take about 3 minutes.
