Ingredients
Spaghetti 2 ripe avocados - peeled & pitted 170g of fresh basil leaves 2 garlic cloves 2 tbsp of freshly squeezed lemon juice 2-3 fl oz of olive oil 340g of cherry tomatoes - halved Salt & pepper to taste
Instructions
- Cook the pasta according to the packaging instructions and drain well
- For the sauce - combine the avocados, basil, garlic and lemon juice in a food processor, adding the salt and pepper to taste. Slowly drizzle in the olive oil whilst mixing until you have the desired consistency then set aside
- In a large bowl, gently mix the spaghetti with the sauce whilst adding in the cherry tomatoes
- Serve immediately and enjoy!
Top it off with some fresh herbs and a sprinkle of Parmesan cheese for a dish that will have your taste buds singing. Plus, with the healthy fats from the avocado, this meal will keep you full and satisfied for hours.
