Looking for a quick and easy meal that's both healthy and delicious? Look no further than Easy Avocado Spaghetti! This spaghetti dish is fresh, colourful and perfect for summertime al fresco dining. It's perfect for busy weeknights when you don't have a lot of time to spend in the kitchen but still want a satisfying meal. The creamy avocado sauce is made with just a few simple ingredients, and it pairs perfectly with spaghetti noodles.

2 ripe avocados - peeled & pitted

170g of fresh basil leaves

2 garlic cloves

2 tbsp of freshly squeezed lemon juice

2-3 fl oz of olive oil

340g of cherry tomatoes - halved

Salt & pepper to taste


1Cook the pasta according to the packaging instructions and drain well

2 For the sauce - combine the avocados, basil, garlic and lemon juice in a food processor, adding the salt and pepper to taste. Slowly drizzle in the olive oil whilst mixing until you have the desired consistency then set aside

3 In a large bowl, gently mix the spaghetti with the sauce whilst adding in the cherry tomatoes

4 Serve immediately and enjoy!

Top it off with some fresh herbs and a sprinkle of Parmesan cheese for a dish that will have your taste buds singing. Plus, with the healthy fats from the avocado, this meal will keep you full and satisfied for hours.
