Easy Avocado Spaghetti

This spaghetti dish is fresh, colourful and perfect for summertime al fresco dining. Avocados contain more fibre than any other food source and contain Vitamins B & E.

Ingredients

Spaghetti

2 ripe avocados

peeled

halved & pitted

170g of fresh basil leaves

2 garlic cloves

2 tbsp of freshly squeezed lemon juice

2-3 fl oz of olive oil

340g of cherry tomatoes

halved

Salt & pepper to taste

Instructions

1Cook the pasta according to the packaging instructions and drain well

2For the sauce - combine the avocados, basil, garlic and lemon juice in a food processor, adding the salt and pepper to taste. Slowly drizzle in the olive oil whilst mixing until you have the desired consistency then set aside

3In a large bowl, gently mix the spaghetti with the sauce whilst adding in the cherry tomatoes

4Serve immediately and enjoy!
