- Put all the ingredients in a saucepan with 50ml water and bring to the boil
- Turn the heat down, part-cover with a lid, and simmer for 35–40 minutes, stirring occasionally until the beetroot is tender
- Check during the cooking time to make sure the beetroot is not drying out and add an extra splash of water, if needed
- Serve warm or cold.
This gently spiced, fruity relish is delicious served with any roasted meat, but especially ham, pork or lamb. It will keep for up to 1 week stored in an airtight container in the fridge or can be frozen.
