Festive Beetroot and Orange Relish

This gently spiced, fruity relish is delicious served with any roasted meat, but especially ham, pork or lamb. It will keep for up to 1 week stored in an airtight container in the fridge or can be frozen.

Ingredients

500g uncooked beetroot

peeled and diced

Juice of 2 oranges

finely grated zest of 1 orange

½ cinnamon stick

1 star anise

1 bay leaf

3 tbsp balsamic vinegar

3 tbsp light soft brown sugar

Instructions

1Put all the ingredients in a saucepan with 50ml water and bring to the boil

2Turn the heat down, part-cover with a lid, and simmer for 35–40 minutes, stirring occasionally until the beetroot is tender

3Check during the cooking time to make sure the beetroot is not drying out and add an extra splash of water, if needed

4Serve warm or cold.
