Savour the flavours of Spain with this simple to cook dish of Parma ham, tomatoes and eggs. Swap out the ham for mushrooms or halloumi for a vegitarian option - absolutely delicious!

Ingredients
1 red onion diced
2 tins of tomatoes
3 eggs
1/2 packet of Parma ham
3 spring onions finely sliced
30g of Parmesan cheese
Handful of flat leaf parsley chopped
Salt and pepper to taste
Instructions
1Sauté the onions until softened and add the tomatoes and simmer for 5 minutes
2Crack the eggs on the tomatoes and continue to cook
3Add the Parma ham, spring onions and continue to simmer until eggs are cooked add salt and pepper to taste turn off the heat and sprinkle with parsley
4Serve and enjoy.
