- Sauté the onions until softened and add the tomatoes and simmer for 5 minutes
- Crack the eggs on the tomatoes and continue to cook
- Add the Parma ham, spring onions and continue to simmer until eggs are cooked add salt and pepper to taste turn off the heat and sprinkle with parsley
- Serve and enjoy.
