For the Fish: 4 Cod fillets

approx 500 g (skinned

cut into large squares)

Ground turmeric

1 tsp

Gram flour

200 g

Ground coriander

1 tsp

Pinch of salt

1 egg & cold water

For the Chips: Maris Piper potatoes

300g (peeled)

Ground turmeric

1 tsp

Fenugreek powder

2 tsp

50 ml vegetable oil


For the Sauce: Vegetable oil

3 tbsp

2 Small white onion

(cut into thin slices)

1 Green chilli


Fresh Ginger

50g (peeled and sliced into thin stips)

1 garlic cloves

(peeled and minced)


¼ tsp & Chilli powder

¼ tsp

Tinned chopped tomatoes

400 g

Vegetable oil

2 tbs

Mustard seeds

1 tsp

Curry leaves

1 tbsp

tamarind concentrate

1 tbsp

Soft brown sugar

1 tbsp


1 tsp

Juice of ½ lemon

Small bunch coriander
