Ingredients
4 ripe mangoes1 tbsp dark brown sugar2 tbsp dark rumPulp and seeds from 3 passionfruits
Instructions
- Cut two ‘cheeks’ from each mango by slicing lengthways on either side of the stone
- Heat a grill pan until hot
- Place the mango cheeks, cut side down, and cook for 2-3 minutes until lightly charred and browned. Remove and set aside
- Place the sugar, rum and Passion Fruit pulp seeds in a 20cm saucepan and bring to a boil
- Remove the heat and spoon this mixture over the griddled mango
- Serve immediately with a scoop of ice cream if desired.
