Ingredients

2 rashers bacon - rind removed

450g self-raising flour - plus extra for dusting

0.5-1 tablespoon marmite

1/4 tsp baking powder

Salt

110g unsalted butter - cubed

100g cheddar cheese - grated

1 egg - lightly beaten

50ml double cream

200ml milk

Instructions

1Preheat the oven to fan assisted 160C / 180C / gas 4

2Preheat the grill and grill the bacon for 2-3 minutes on each side. When done transfer to some kitchen paper, let cool, cut into small pieces and set aside

3Add the flour, marmite, baking powder, salt and butter into a food processor and whiz until it reaches a breadcrumb consistency

4Transfer the mixture into a large bowl and mix in the cheese, bacon pieces and egg

5Make a well in the centre of the dry ingredient and pour in the cream and 3/4th's of the milk. Mix till it a soft non-sticky dough forms. If the mixture is too dry then slowly add in the rest of the milk until the mixture comes together

6Transfer the dough to a lightly floured surface and roll out till it is about 2.5cm thick

7Cut out 5cm rounds using a pastry cutter, reform the trimming and cut out a few more rounds

8Transfer the cut dough to a lined baking tray, brush the top of the scones with some milk and bake in the oven for 15-20 minutes, or until golden-brown.
