Apricot, Cranberry & Chestnut Stuffing

This deliciously different chestnut, apricot and cranberry stuffing compliments the turkey wonderfully and is roasted separately from the festive bird so that it crisps up and adds an extra flavour to your Christmas dinner.

125g dried apricots

100g dried cranberries

Fresh breadcrumbs

100g cooked chestnuts (you can buy these ready to use in a pouch) chopped

3 handfuls fresh chopped herbs – parsley


rosemary and thyme

1 tsp sea salt

1 tsp ground black pepper

100g butter melted

2 onions quartered

1 celery


1Preheat the oven to 200C / 400F

2Melt the butter in the saucepan and add in the oil

3Fry the onion and celery for about 10 minutes until soft

4Mix in the chestnuts and fry for about 2 minutes until they are golden

5Switch off the heat, mix in the rest of the ingredients and season with salt and pepper

6Transfer the stuffing to a lightly oiled roaster and bake for about 20 minutes until crunchy and golden.
