Ingredients
125g dried apricots 100g dried cranberries Fresh breadcrumbs 100g cooked chestnuts (you can buy these ready to use in a pouch) chopped 3 handfuls fresh chopped herbs – parsley sage rosemary and thyme 1 tsp sea salt 1 tsp ground black pepper 100g butter melted2 onions quartered 1 celery
Instructions
- Preheat the oven to 200C / 400F
- Melt the butter in the saucepan and add in the oil
- Fry the onion and celery for about 10 minutes until soft
- Mix in the chestnuts and fry for about 2 minutes until they are golden
- Switch off the heat, mix in the rest of the ingredients and season with salt and pepper
- Transfer the stuffing to a lightly oiled roaster and bake for about 20 minutes until crunchy and golden.
This stuffing makes an excellent side dish for a Festive turkey or a traditional Sunday roast chicken dinner. Serve along with some tasty veg such as these Balsamic Roast Sprouts!
